Beet Kvass

Ingredients

  • 4 medium-sized organic beets (peeled if non-organic), chopped into 1-inch cubes
  • 2 tablespoon sea salt (non-iodized)
  • ≈ 48 ounces (6 cups) filtered water
  • Optional: 2–4 cloves garlic, peeled (for added flavor)

  1. Prepare Beets: Wash and chop the beets into cubes. Avoid grating as this can release too much sugar, leading to faster fermentation or potential spoilage.
  2. Combine Ingredients: Place the beet cubes in a clean glass jar, leaving about 2-4 inches of headspace. There will potentially be bubbles that may overflow as the liquid ferments.
  3. Add Salt and Water: Dissolve the sea salt in filtered water and pour it over the beets, ensuring they are fully submerged.
  4. Optional Flavoring: Add garlic cloves if desired.
  5. Ferment: Close and seal the jar. Let ferment at room temperature (65–75°F) for 5–7 days, tasting periodically. The kvass should develop a tangy, earthy flavor. You can let the fermentation process go longer, depending on personal preference.
  6. Strain and Store: Once fermented to your liking, strain the liquid into a clean bottle and store it in the refrigerator. Consume within 2–3 weeks.

Ingredient Variations

Ginger Beet Kvass

  • Add 1–2 inches of fresh ginger root, sliced, for a warming and digestive-friendly twist.

Citrus and Turmeric Kvass

  • Add 1/2 orange or lemon (thinly sliced) and a small piece of fresh turmeric root. This adds a bright, anti-inflammatory kick.

Herbal Beet Kvass

  • Include fresh herbs like rosemary, thyme, or dill for added complexity and potential immune-boosting benefits.

Spiced Beet Kvass

  • Add 2–3 whole cloves, a cinnamon stick, and/or a few black peppercorns for a warming, spiced flavor.

Carrot and Beet Kvass

  • Combine 1 part chopped carrots with 2 parts chopped beets for a milder, slightly sweeter kvass.

Probiotic-Enhanced Kvass

  • Add 1–2 tablespoons of whey (strained from yogurt) or the brine from a previous ferment to jumpstart fermentation.

Apple and Beet Kvass

  • Include 1 small apple, cored and chopped, for a touch of natural sweetness.

Golden Beet Kvass

  • Substitute red beets with golden beets for a slightly milder flavor and a beautiful golden hue.
