Meatball Base

  • 3 lb ground meat
  • 1 cup finely diced onion

  • 2 tsp ground cumin
  • 1½ tsp ground turmeric
  • 2 tsp kosher salt

Curry Sauce

  • 2 large onions, finely diced
  • 6 cloves garlic, minced
  • 2 Tbsp fresh ginger, grated
  • 1½ cups crushed tomatoes or tomato purée
  • 2 cups full-fat coconut milk
  • 2 tsp garam masala
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp paprika (optional)
  • 1–1½ tsp kosher salt, to taste

Vegetables

  • 6–8 cups fresh spinach, loosely packed

Cooking Fats

  • 2–3 Tbsp neutral oil (avocado, coconut, or olive oil) or ghee

Preparation & Cooking Instructions

Step 1: Build the Meatballs

  1. Combine all meatball ingredients in a large mixing bowl.
  2. Mix gently until evenly incorporated.
  3. Form meatballs approximately 1½–2 inches in diameter.

Step 2: Brown the Meatballs

  1. Heat oil in a large skillet or Dutch oven over medium-high heat.
  2. Brown meatballs in batches, rotating to develop color on all sides.
  3. Remove and set aside. Meatballs will finish cooking in the sauce.

Step 3: Develop the Curry Base

  1. Lower heat to medium and add additional oil if needed.
  2. Sauté onions until soft and lightly caramelized, about 8–10 minutes.
  3. Add garlic and ginger; cook until fragrant, 30–60 seconds.
  4. Stir in crushed tomatoes and cook until slightly thickened, about 5 minutes.
  5. Add spices and salt, stirring until fully incorporated.

Step 4: Simmer

  1. Add coconut milk and bring the sauce to a gentle simmer.
  2. Return meatballs to the pan, ensuring they are well coated.
  3. Cover and simmer for 20–25 minutes, until meatballs are cooked through.

Step 5: Finish

  1. Stir in spinach during the final 2–3 minutes of cooking.
  2. Cook just until wilted.
  3. Taste and adjust seasoning as needed.
